Kabab Maghdour

Ingredients (prepare for 3 people)

  • Half a kilogram lamb meat for skewers
  • 1 big or 2 small finely chopped onions
  • Fresh chopped parsley
  • Salt
  • Pepper
  • Ground cumin (2 spoons)
  • Ground paprika pepper (or chili for those who prefer it hot) (1 spoon)
  • Olive oil (2 large spoons)
  • 1 small tomato
  • 3 eggs


Heat olive oil in saucepan. Add meat, onions, parsley and spices. Cook on light heat until sauce becomes thick. A few minutes before serving, break eggs on top and let them cook in the sauce, without stirring.

These tajines are usually served with bread, preferably whole meal Moroccan bread or baguettes. For a better taste, eat WITH THE HANDS!
