Pabellon Criollo

The pabellón Criollo consists of a plate with four different things: Caraotas Negras (Black Beans), Carne Mechada (Beef), Arroz (Rice) and Platano Frito (fried bananas).

Caraotas Negras (Black Beans)


You need to put the beans in enough water in order to soften the, They Hill absorb the water so you will have to pour more. This has to be done for two hours. You Hill have to add an onion finely chopped, one red pepper finely chopped, some sugar and two spoons of minced garlic. They must cook for at least four hours at a medium heat in order to be creamy. You must add water every time it is absorbed in order not to burn them. Once they are soft you must add salt to taste.

Carne Mechada (Beef)


  • Half a kilo of flank steak
  • One Onion finely chopped
  • one pepper
  • two sticks of celery
  • cilantro
  • six canned tomatoes without water
  • garlic.


  1. You have to put the beef in enough water then you must add half an onion and a little bit of salt. Do not throw the water away. Once 45 minutes have passed take the meta out and let it cool down in order to make strings out of it with your fingers.
  2. In a big pot you have to put oil in a reasonable quantity, then you fry the garlic, onion, cilantro, pepper and celery. One every thing is sautéed you can add the meat and you fry it for a while longer. Afterwards, you add the tomatoes and you fry it a while longer until you have the consistency you like.
